Makes enough for 10 guests

Ingredients for the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Cordial: Combine the listed items inside a pot, heat until it reaches a light boil, mixing to dissolve. Then, remove from the burner and leave to cool fully. Pour into an sealable bottle, cap it and store chilled, it can be stored for around one month.

For the Premix: Pour all the liquid ingredients into a big jug, let it rest for an hour, then filter it best through muslin, making it completely strained.

To serve: Measure 85ml from the cocktail base into a cocktail shaker packed with ice, and agitate carefully for a minute to cool it down. Pour into an chilled martini glass or equivalent, garnish with some cranberries and finish with a light spray of the essential oil over the top.
